Basic Pork Ribs

  • 1 - rack pork ribs or baby back pork ribs

The rub

  • 1 - tablespoon brown sugar
  • 1 - tablespoon onion powder
  • 1 - teaspoon crack black pepper
  • 1 - teaspoon mild curry
  • ½ - teaspoon white pepper
  • ½ - teaspoon garlic powder
  • ½ - teaspoon coriander
  • ½ - tablespoon cayenne pepper
  • ¼ - teaspoon cumin
Mix all spices together until thoroughly combined. This should make enough rub for 3 or 4 rack of ribs.

The Ribs

The membrane on the bone side of the ribs must be removed. It is pretty much non edible and prevents penetration of the rub and smoke.

Use a knife to get started. Once you can get a grip, pull it right off.

Now apply a liberal amount of rub to each side of the ribs. They are now ready for the smoker.

The Smoker

Heat your smoker to 250 degrees. If you are using a gas grill, set it up for indirect grilling.

Place the ribs bone side down in the center of the smoke chamber or as far away from the heat source of your grill. Add wood chips and you're smoking.

Smoke the ribs for 4 to 5 hours. Now remove the ribs and let them rest for about 10 minutes or so. Cut them into individual pieces and your ready to enjoy some outstanding bbq pork ribs.
